Cartoceto DOP Olive Oil
The DOP Cartoceto Extra Vergin Olive Oil has demonstrated to have all of the quality of a reputable Extra Vergin Oil: is able to add esquisit flavor to a piece of rosted bread. The famous “Baccalà e crostini all’olio di Cartoceto” is an example of a simple and delicious plate.

Wine and Fossa Cheese
Wineyards are always open to all of our guests. Here you will be able to participate in wine tastings, sample oil, cheeses, cold cuts and will be able to buy them directly from the suppliers.

Grapes
In the Wineyards of the area you will be able to find the typical Bianchello del Metauro and the Sangiovese that are exclusively produced here.
Winemaking
The cicle of wine making starts from the ripen of the grape at that point it is selected and harvest.
Ovillis Ambrosia Cheese - Pecorino Seasoned in Fossa
The maturing of the Fossa Goat cheese takes place underground, in selected pits by Palazzo Rusticucci in Cartoceto.
The antient cardinal residence two old cells digged into tuff and clay, have been dedicated for years to the seasoning of the Ovillis Ambrosia Goat cheese. The maturing of the cheese starts in August, when the cheese will be placed in special bags/containers iand after in the pits. At this point the herbal seasoning is added and the opening of the pit will be sealed shut, allowing for the fermentation process to take place.

The cheese has a dark crust , and once it is cut the colors vary from soft pink to orange ending with a yellowish color typical of the inside paste. The flavour is strong and unique definately worth a try!
